Meatless Monday: I am such a planner, I am now planning all my meals!!

Okay so a while back I wrote about how I have gained my baby weight back. How I want to lose it and then some, trying to go meatless on mondays and then some. Well at work if we take a survey about our health we get a discount on what we pay. So of course I do that every year! This year I was happy and sad to learn I qualified for a health coach and lifestyle program. Seriously, I am that fat I qualify for nutrtional counseling, the sad part. I finally get to talk to someone about food and eating well, the good part. I haven’t called the health coach yet because I am still trying out the program but I love the meal planner it’s super easy and I like the food options. Bonus score I can use the plan for the whole family ( minus the baby)! So this is the first full week so I will post my meal plan and the recipe for tonight’s meatless Monday, oh wait the hubs is at fantasy football tonight so dinner is baked potatoes with broccoli and cheese. Yum!
